Der 16-jährige Knappogue Castle reift mindestens 14 Jahre lang in Bourbon-Fässern und wird dann in Oloroso-Sherry-Fässern veredelt, um mindestens 16 Jahre lang zu reifen. Dies verleiht ihm nussige und komplexe Sherry-Noten.
